A couple years ago, I was hanging out with a friend when it was her turn to bring snacks to Bible study. She had decided to make cucumber cream cheese sandwiches, so we talked and put them together. As we were working, she thought that they could use a little more color to perk them up, so I suggested adding some paprika. It was a stroke of brilliance. Paprika adds so much to this simple dish. A couple of these sandwiches makes a good meal, while quartering them produces a refreshing appetizer.
whipped cream cheese
1. Slice the cucumber.
2. Spread cream cheese on the bread.
3. sprinkle paprika on top of the cream cheese.
4. Place the cucumber slices on the bread.
5. Slice each sandwich into quarters.
Variation: These are also very good if you use dill instead of paprika.
